PORK & BOK CHOY HOISIN STIR FRY

Prep/Chopping Time 10-15 Min / Cook Time 15 Min

STIR FRY INGREDIENTS

  • 1.5 lbs lean pork

  • 2 tablespoons olive oil

  • 1 white onion

  • 1 tablespoon garlic

  • 1 yellow squash

  • 1 orange bell pepper

  • 6 oz Shitake Mushrooms

  • 1 head of bok choy

  • 4 tablespoons Hunan Sauce

  • 1 jalapeno pepper

Preparation:

1.     Prepare your Vegetables

2.    Cut your bok choy on a cutting board into 1-2 inch wide pieces, place in a bowl, wash/rinse the bok choy 2-3 times until there is no longer any dirt or sand coming from the rinse water, and then drain and place the bok choy on a clean kitchen towel or paper toweling until you are ready to use it later.

3.    Rinse/Wash the remainder of your vegetables before chopping

4.    Core the Bell Pepper and cut into ¼ inch strips lengthwise and then cut the pieces widthwise in half.  Each piece will be around 1 inch long

5.    Peel and cut your onion in half lengthwise and then slice into 1/8-1/4 inch wide pieces and set aside with your bell pepper

6.    Cut the ends off the yellow squash and then cut in half lengthwise.  Slice these long pieces into little half moon shapes widthwise and set aside with the onion and bell pepper.

7.     Slice the mushrooms into 3-4 pieces each lengthwise and set aside

8.    Core the jalapeno and remove the seeds and het the jalapeno in half lengthwise.  Then finely slice the jalapeno slices widthwise to use as a garnish later

9.    Peel and mince 1-2 garlic cloves

10. Cut your lean pork up into roughly 1 inch pieces.

11.  Now that everything is prepped, time to cook!

12.  In a large Sauté pan or wok, add olive oil, avocado oil or other neutral oil to the pan.  Allow that to get up to temperature and add the pork to the pan

13.  Add Salt, Black or White Pepper, Garlic Powder, Onion Powder, and Red Pepper Flakes to the Pork as it cooks.

14.  Once the pork is fully cooked, remove it from the pan and set it aside in a bowl.

15.  To the sauté pan, add the onion, bell pepper, and yellow squash to it and add a sprinkle of salt and pepper then stir to combine and not allow the veggies to burn

16.  Once this group of veggies are half way cooked to the desired texture you like, add in the garlic and sliced mushrooms then sauté for 1-2 additional minutes

17.  Add the bok choy to the pan along with additional salt and stir to combine until the bok choy is wilted to your desired texture (This step will go quickly 1-2 minutes max)

18. Combine the set aside cooked pork and juices from the bowl back to the pan and add Hoisin Sauce.  At this time, I recommend turning the heat off and just stirring to warm the sauce with the cooked mixture.

19.  Plate this up, add sliced fresh jalapenos on top along with a drizzle of hoisin sauce

 

This meal is great with Pork, Chicken, or even Steak!  Hoisin Sauce is very versatile (in my opinion) and provides a slightly sweet flavor to your dish.  The stir fry provides a great low calorie, low carb, high protein option for your lunches or dinners.  You can also serve this up over steamed rice, fried rice, or noodles and make it an even heartier dish.

 

I do make a couple variations of this dish that I will share in the future.  It is a great quick and easy 30 minute meal go to weeknight dinner dish!
