CRISPY BBQ SALMON BITES

INGREDIENTS

  • 1lb Atlantic Salmon Tail or Collar

  • ½ tsp Seasoned Salt

  • ½ tsp Ground Black Pepper

  • 4 Tbsp Sweet Baby Rays Hawaiian BBQ Sauce

  • 2 tsp Sriracha

 

PREPARATION

1.     I purchased a package of salmon collar and tail pieces.  If you cannot find that in your grocery store, you will want to buy a tail portion and cut it into 1 inch pieces

2.     Rinse the salmon to remove any wayward scales and feel for any bones that may still be remaining in the flesh and remove them if you find them

3.     Pat the salmon dry on paper towel

4.     Sprinkle each side of your salmon pieces with the seasonings (Seasoned Salt & Ground Black Pepper)

5.     Place in the Air Fryer basket in a single layer and try not to overlap the pieces

6.     Air Fry for 10 minutes at 350 Degrees

7.     Gently remove the pieces from the basket and place in a bowl.  Add the BBQ Sauce and lightly toss or fold the pieces in the bowl to coat with the BBQ Sauce

8.     Gently add the pieces back to the air fryer basket and cook for 6 minutes at 400 Degrees

9.     You could also brush the BBQ Sauce on the pieces; however, you will still want to flip them to get sauce on both sides

10.  After the 400 Degree cooking cycle, the pieces should come out with come crispy edges

11.  Give these a few minutes to cool down so you do not burn your fingers or mouth trying to handle them!  That BBQ Sauce will be sticky and hot for the sections of the nuggets that didn’t crisp up!

12.  Plate and drizzle with sriracha

 

I know why everyone is making these now!  These Salmon Bites would make great appetizers for a party, a protein topping for a salad, or even a main dish protein to pair with rice and a veggie.  The slightly crispy edges and the sticky caramelized BBQ sauce complement the fattier section of the salmon tail and collar.  I highly recommend using a tail or collar portion as the fat content is a little higher so the pieces will hold up in the cooking process a little better and will also crisp up better than the fillet/flank portion of the fish!  I will be making my salmon like this now vs a traditional salmon steak/fillet!
