MY PERFECT MEDIUM RARE STEAK

Prep/Chopping Time 5 Min / Cook Time 10 Min

INGREDIENTS

  • 2 Bone in Ribeye Steaks (Mine were around 1.25 lbs each with the bone in)

  • Kosher Salt

  • Coarse Ground Black Pepper

 

Preparation:

1.     When I do not cook my steaks on a grill, I always use my Cast Iron Skillet.

2.    I allow it to warm up on Medium High Heat for 3-5Minutes (I have a gas range and I turn my knob about 1/3 of the way between Medium and High on the knob)

3.    I do not any cooking oil or anything to the skillet, I allow the natural fat from the Ribeye to generate the fat for searing.

4.    I generously salt and pepper the side that I will lay down in the skillet only about 1 minute before I place it on the hot cast iron.

5.    I set a timer for 5 Minutes and allow it to remain in the skillet untouched for the cook time.

6.    While it is cooking, I sprinkle more salt and pepper on the other side of the meat.

7.     After you flip it, set a time for an additional 5 minutes.

8.    Remove from the skillet and allow it to rest on your cutting board for 10 minutes. 

9.    I took the internal temp of mine when it came off the skillet and it was 133 Degrees.

10. As it rests, the steak will soak its juices back in so that when you cut it they do not just run all over the cutting board.

11.  Repeat with Ribeye Number 2

12.  Once your first Ribeye has rested, you will be able to slice it up and serve it.

13.  I sliced mine away from the bone and then cut it into half inch strips widthwise.

 

If you would like, you could add some compound butter on top of the steaks as they rest, or you could add butter, garlic and thyme into the skillet and baste the steak with the butter the last minute of its cook time.  My cast iron skillet is a life saver for making a great steak in the winter or in the Dead of the Summer heat here in Dallas when you don’t want to be standing over your hot grill.  Many people recommend not adding the black pepper before you sear it as it could cause the pepper to be bitter; however, I have not had a problem with that occurring. I served mine up with a couple eggs over easy and had breakfast for dinner!
