HAM, ONION, POBLANO, AND CHEESE OMELET
Prep/Chopping Time 5-7 Min / Cook Time 5-7 Min
INGREDIENTS
175 Egg Beaters/Egg Substitute
56g (1 serving) Smithfield Cubed Ham
1/4 Cup Chopped Onion
1/4 Cup Chopped Poblano
1 Velveeta Cheese Slice
1.5 Tbsp Whataburger Spicy Ketchu
Cooking Spray Oil
Preparation:
1. Always prepare yourself a cup of coffee of your choice before you begin any morning breakfast cooking! I add some Zero Sugar Coconut Cream Creamer into my coffee. I find it doesn’t have too much of a “Sweetener” aftertaste.
2. The Real First Step…Find yourself a Medium Non-Stick Sauté Pan and put that on your stovetop at Medium Heat.
3. Spray your pan with a light coating of cooking spray and then add your chopped onion and poblano to the pan. Keep them moving around the pan for 1-2 minutes. (If you do not store chopped onion and poblano in your refrigerator like I do weekly, you will want to dice your onion and pepper before you heat your pan).
4. Add a sprinkle of Salt and Black pepper to your onions and poblano then sauté until they are the softness level you like for your omelet
5. Add in some cubed ham to the pan and stir to mix it in and allow it to warm through
6. Slide the cooked veggies and ham to one side of the pan and add an additional layer of cooking spray to the pan.
7. Add your Egg Substitute to the side of the pan that you sprayed and then pull the cooked veggies and ham over on top of the liquid egg and give it a gentle stir to combine and allow it to hang out on medium heat.
8. After 1 minute, lift the pan and give a slight tilt and swirl in a rocking fashion to allow any liquid egg to disburse to the side.
9. Turn the heat down to low, divide a cheese slice in half, and then place those pieces on 1 half of your omelet
10. Allow this to rest for 2-3 minutes as it will allow your omelet to lift off your pan and not stick.
11. Fold the half of the omelet without cheese over on top of the cheesy side.
12. Gently slide the omelet off onto a plate
13. I like to top mine with some Spicy Whataburger Ketchup or Siracha
At the beginning of each week, I dice up 1 whole onion and 1-2 poblano peppers and put them in a Tupperware storage container to have handy to use throughout the week. This week I purchased a package of Smithfield Cubed Ham to use for my morning Omelets. I change the meat up weekly to not get tired of my food choice. Skinless Turkey Smoked Sausage or Deli Ham or Turkey make great substitutes for the cubed ham.
This is a quick and easy 10-15 minute breakfast option that can pack a lot of volume and protein in your morning to keep you full until lunch. I prefer a hot breakfast over a cold breakfast, so this is my go to morning choice, unless I am traveling for work then it is normally a protein bar or starbucks breakfast.
