TOMATILLO AVOCADO SALSA

Approximate Calories per 1oz of Salsa: 19 Calories, 2.5g Carbs, 1.1g Fat, .4g Protein

TOMATILLO AVOCADO SALSA INGREDIENTS

  • 18-20 Tomatillos

  • 4 Medium to Large Jalapeños

  • 4 Large Serrano Chile Peppers

  • 3 Cloves of Garlic (1 Very Large Clove)

  • 2 Limes

  • 1 tbsp Kosher Salt

  • 1 Large White Onion

  • 2 Medium Avocados

 

Preparation:

1.     Peel your tomatillos and place in a bowl

2.    Rinse/Wash your tomatillos 2-3 times in the bowl to remove any dirt or husks that may still be sticking to your tomatillos

3.    Find your Blender

4.    On a chopping board, cut your tomatillos into half or quarters. 

a.     You know your blender’s power better than I do. 

b.    So, if you have an older blender or one with lower wattage you may have to use smaller pieces. 

c.     Also, you may need to blend 5-10 cut up tomatillos first before adding the rest so that you have liquid at the bottom to help when you add all the other ingredients.

5.    Finish cutting all the tomatillos and place them in the blender

6.    Wash/Rinse your Jalapeños and Serranos

7.     Cut the tops off of all of your peppers and discard the tops

8.    Cut all the peppers in thirds and then add pepper pieces to the blender with the tomatillos (DO NOT REMOVE THE SEEDS FROM THE PEPPERS…unless you want a very mild salsa)

9.    Smash your garlic cloves with the side of your knife and remove the skins and place the cloves in the blender as well

10. Eyeball or measure out approximately 1/2 - 1 tablespoon of kosher salt and add that into the blender (If you are salt sensitive, start with ½ tablespoon)

11.  Cut 2 Limes in half and juice them into the Blender

12.  Blend on High Speed for 1-2 minutes

13.  Be Brave…It’s time to give it a taste to see if it needs more salt!

a.     If you need training wheels for this step, you can grab a tortilla chip and place some on the chip for your test bite

b.    If you need more salt, add more and blend again.  While it is still in the blender is the best time to add more salt as the blender will help mix it thoroughly in the salsa.

c.     If you want more heat, this is the time to add more peppers to the mix as well and blend!!!

14.  Add your salsa to a serving bowl or storage container

15.  If the salt levels are a little high for your liking at this point, don’t worry just yet.  It may tame down just a touch when you add your onion and avocado.

16.  Dice your large white onion into ¼ inch pieces and add to the salsa

17.  Cut the avocados in half and remove the pit/seed from each half

18. Slice the avocado in its skin/peel length wise 4-5 times and then cut the slices width wise 8-10 times so that the avocado is in ¼ inch chunks

19.  Use a spoon to remove the avocado from the skin/peel and place it in the salsa

20. Stir this together well to combine

21.  Taste this one more time for salt content and lime

a.     If you would like it more salty, add some at this point

b.    If you would like it a little more limey, add more at this point

c.     If it happens to be too salty, add more lime and that can help tame down the salt.  Also, adding additional Avocado can help too if you happened to be heavy handed with the salt shaker.

22. Time to Enjoy!!!

 

You are going to Love this Salsa!!!  It has a great amount of spice, but not too much of a kick to prevent you from dipping another chip in for more.  It has a bright flavor, with bursts of lime and a slight tangy flavor from the tomatillos.  This salsa pairs VERY well on your eggs in the morning, on top of a breakfast taco/burrito, chips and salsa, or alongside my favorite, carne asada!  If you need more heat, add a few more peppers.  If you like less heat, add a couple less peppers.
